Ingredients
- Glutinous rice - 200 grams
- Gac fruit puree - 100 grams
- Coconut milk - 150 ml
- Salt - 1/2 teaspoon
- Sugar - 1 tablespoon
- Sesame seeds - 2 tablespoons (toasted)
- Chopped roasted peanuts - 2 tablespoons
- Scallions - 2 (finely sliced)
- Soy sauce - 1 tablespoon (for drizzling)
- Fresh cilantro - a few sprigs (for garnish)
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 20 minutes.
- While the rice is steaming, combine the gac fruit puree, coconut milk, salt, and sugar in a bowl and mix well.
- Once the rice is done steaming, transfer it to a large bowl and gently fold in the gac mixture until the rice is evenly colored and coated.
- Return the colored rice to the steamer and steam for an additional 15 minutes to allow the flavors to meld.
- While the rice is steaming, prepare the toppings by toasting the sesame seeds in a dry skillet over medium heat until golden, about 3-4 minutes.
- Once the rice is ready, remove it from the steamer and let it cool slightly before serving.
- Serve the xoi gac warm, topped with toasted sesame seeds, chopped peanuts, sliced scallions, and a drizzle of soy sauce. Garnish with fresh cilantro.
