Ingredients
- Glutinous rice - 200 grams
- Coconut milk - 150 ml
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Shallots - 2 medium, thinly sliced
- Vegetable oil - 2 tablespoons
- Sesame seeds - 1 tablespoon, toasted
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and steam it in a bamboo or metal steamer for about 30 minutes until tender and sticky.
- In a small saucepan, combine the coconut milk, sugar, and salt. Heat gently until the sugar dissolves but do not boil.
- Once the rice is cooked, transfer it to a mixing bowl and pour the coconut milk mixture over it. Stir well to combine and let it sit for about 10 minutes to absorb the flavors.
- Meanwhile, heat the vegetable oil in a small frying pan over medium heat. Add the thinly sliced shallots and fry them until golden brown and crispy. Remove from oil and drain on paper towels.
- To serve, scoop the coconut sticky rice onto plates, sprinkle with toasted sesame seeds and top with the crispy shallots.
