Ingredients

  • Glutinous rice - 200 grams
  • Coconut milk - 150 ml
  • Sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Shallots - 2 medium, thinly sliced
  • Vegetable oil - 2 tablespoons
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer for about 30 minutes until tender and sticky.
  3. In a small saucepan, combine the coconut milk, sugar, and salt. Heat gently until the sugar dissolves but do not boil.
  4. Once the rice is cooked, transfer it to a mixing bowl and pour the coconut milk mixture over it. Stir well to combine and let it sit for about 10 minutes to absorb the flavors.
  5. Meanwhile, heat the vegetable oil in a small frying pan over medium heat. Add the thinly sliced shallots and fry them until golden brown and crispy. Remove from oil and drain on paper towels.
  6. To serve, scoop the coconut sticky rice onto plates, sprinkle with toasted sesame seeds and top with the crispy shallots.
