  • Toasted sesame oil - 1 tablespoon (15 ml)
  • Rice vinegar - 2 tablespoons (30 ml)
  • Soy sauce (kosher) - 1 tablespoon (15 ml)
  • Maple syrup - 1 teaspoon (5 ml)
  • Crushed peanuts - 20 grams, for garnish

Steps

  1. In a large bowl, combine the chopped romaine lettuce, sliced cucumber, julienned carrot, chopped cilantro, chopped mint, sliced red bell pepper, and chopped green onion.
  2. In a small bowl, whisk together the toasted sesame oil, rice vinegar, soy sauce, and maple syrup until well combined.
  3. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  4. Allow the salad to sit for about 5 minutes to let the flavors meld.
  5. Serve the salad in bowls, garnished with crushed peanuts on top.
