Ingredients
- Glutinous rice - 150 grams
- Coconut milk - 200 milliliters
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Ripe mango - 1 medium (about 200 grams)
- Sesame seeds (optional) - 1 tablespoon
Steps
- Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results.
- After soaking, drain the rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam the rice for about 30 minutes until it becomes translucent and tender.
- While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves and the mixture is heated through but not boiling.
- Once the rice is cooked, transfer it to a bowl and pour about 150 milliliters of the coconut milk mixture over it. Stir to combine and let it sit for about 10 minutes to absorb the flavors.
- Peel the ripe mango and slice it into thin pieces. Set aside.
- To serve, mold the coconut sticky rice onto a plate or in a small bowl, then arrange the mango slices on the side. Drizzle with the remaining coconut milk mixture and sprinkle with sesame seeds if using.
