Ingredients

  • glutinous rice - 200 grams
  • water - 400 ml
  • mushrooms (shiitake or oyster) - 100 grams, diced
  • carrots - 50 grams, finely chopped
  • green onions - 2 stalks, chopped
  • soy sauce - 1 tablespoon
  • sesame oil - 1 tablespoon
  • vegetable oil - 1 tablespoon
  • salt - 1/2 teaspoon
  • pepper - 1/4 teaspoon
  • fried shallots - for garnish
  • coriander - for garnish

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 30 minutes, or until cooked and sticky.
  3. While the rice is steaming, heat vegetable oil in a pan over medium heat. Add the diced mushrooms and sauté for 3-4 minutes until they begin to soften.
  4. Add the chopped carrots to the pan and continue to sauté for another 3 minutes. Stir in the chopped green onions, soy sauce, sesame oil, salt, and pepper. Cook for an additional 2 minutes, then remove from heat.
  5. Once the rice is fully cooked, transfer it to a serving platter. Top it with the sautéed vegetable mixture.
  6. Garnish with fried shallots and fresh coriander. Serve warm.
