- Cauliflower - 300 grams
- Chicken breast - 200 grams
- Coconut milk - 100 ml
- Garlic - 2 cloves, minced
- Shallots - 2, finely chopped
- Fish sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Green onions - 2, chopped
- Cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- Begin by washing and cutting the cauliflower into florets. Steam the cauliflower for about 10 minutes until tender.
- In a food processor, pulse the steamed cauliflower until it resembles rice. Set aside.
- In a skillet over medium heat, add a tablespoon of oil and sauté the minced garlic and chopped shallots until fragrant.
- Add the chicken breast to the skillet, season with fish sauce, salt, and black pepper. Cook until the chicken is fully cooked and no longer pink, about 6-8 minutes.
- Remove the chicken from the skillet, shred it with two forks, and return it to the skillet. Stir in the coconut milk and cauliflower rice, mixing well until heated through.
- Serve the mixture hot, garnished with chopped green onions and cilantro, with lime wedges on the side.
