Ingredients

  • Cauliflower - 300 grams
  • Chicken breast - 200 grams
  • Coconut milk - 100 ml
  • Garlic - 2 cloves, minced
  • Shallots - 2, finely chopped
  • Fish sauce - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 2, chopped
  • Cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Begin by washing and cutting the cauliflower into florets. Steam the cauliflower for about 10 minutes until tender.
  2. In a food processor, pulse the steamed cauliflower until it resembles rice. Set aside.
  3. In a skillet over medium heat, add a tablespoon of oil and sauté the minced garlic and chopped shallots until fragrant.
  4. Add the chicken breast to the skillet, season with fish sauce, salt, and black pepper. Cook until the chicken is fully cooked and no longer pink, about 6-8 minutes.
  5. Remove the chicken from the skillet, shred it with two forks, and return it to the skillet. Stir in the coconut milk and cauliflower rice, mixing well until heated through.
  6. Serve the mixture hot, garnished with chopped green onions and cilantro, with lime wedges on the side.
