Ingredients

  • Glutinous rice - 200 grams
  • Gấc fruit pulp - 100 grams
  • Coconut milk - 150 ml
  • Salt - 1/2 teaspoon
  • Sugar - 1 tablespoon
  • Water - 250 ml
  • Sesame seeds (toasted) - 2 tablespoons
  • Scallions (chopped) - 2 tablespoons

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and place it in a steamer basket lined with cheesecloth or a clean kitchen towel.
  3. In a small bowl, mix the gấc fruit pulp with the coconut milk, salt, and sugar until well combined.
  4. Pour the gấc mixture over the drained rice and toss gently to coat the rice evenly.
  5. Steam the rice for about 30-35 minutes, or until the rice becomes tender and sticky. Check occasionally to ensure it doesn't dry out.
  6. Once cooked, fluff the rice with a fork and let it sit for 5 minutes.
  7. Serve the Xôi Gấc Chay warm, garnished with toasted sesame seeds and chopped scallions.
