Ingredients
- Glutinous rice - 200 grams
- Gấc fruit pulp - 100 grams
- Coconut milk - 150 ml
- Salt - 1/2 teaspoon
- Sugar - 1 tablespoon
- Water - 300 ml
- Sesame seeds (toasted) - 2 tablespoons
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours, or overnight for best results.
- After soaking, drain the rice and mix it with the gấc fruit pulp, salt, and sugar in a large bowl until well combined.
- Prepare a steamer by bringing water to a boil in the bottom pot. Line a steaming tray with cheesecloth or banana leaves to prevent sticking.
- Spread the rice mixture evenly in the steaming tray and place it in the steamer. Steam for about 30-40 minutes, or until the rice is tender and cooked through.
- In a small saucepan, heat the coconut milk over medium heat until warm, then stir in a pinch of salt and remove from heat.
- Once the rice is cooked, remove it from the steamer and let it cool slightly before serving. Fluff the rice with a fork to separate the grains.
- Serve the Xôi Gấc warm, drizzled with the warm coconut milk and topped with toasted sesame seeds.
