- Glutinous rice - 200 grams
- Gấc (red melon) pulp - 100 grams
- Coconut milk - 150 ml
- Sugar - 30 grams
- Salt - 1/2 teaspoon
- Sesame seeds (toasted) - 2 tablespoons
- Fresh herbs (mint or cilantro) - for garnish
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- After soaking, drain the rice and place it in a steamer lined with cheesecloth or a clean kitchen towel.
- In a bowl, mix the gấc pulp with the coconut milk, sugar, and salt until well combined.
- Pour the gấc mixture over the soaked rice evenly, then mix gently to ensure all the rice is coated.
- Steam the rice on high heat for about 30-35 minutes, or until the rice is fully cooked and sticky.
- Once cooked, remove the rice from the steamer and let it cool slightly before serving.
- Serve the xôi gấc warm, garnished with toasted sesame seeds and fresh herbs.
