Ingredients

  • Glutinous rice - 200 grams
  • Gấc (red melon) pulp - 100 grams
  • Coconut milk - 150 ml
  • Sugar - 30 grams
  • Salt - 1/2 teaspoon
  • Sesame seeds (toasted) - 2 tablespoons
  • Fresh herbs (mint or cilantro) - for garnish

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. After soaking, drain the rice and place it in a steamer lined with cheesecloth or a clean kitchen towel.
  3. In a bowl, mix the gấc pulp with the coconut milk, sugar, and salt until well combined.
  4. Pour the gấc mixture over the soaked rice evenly, then mix gently to ensure all the rice is coated.
  5. Steam the rice on high heat for about 30-35 minutes, or until the rice is fully cooked and sticky.
  6. Once cooked, remove the rice from the steamer and let it cool slightly before serving.
  7. Serve the xôi gấc warm, garnished with toasted sesame seeds and fresh herbs.
