Xôi Gà is a fragrant Vietnamese sticky rice dish topped with tender chicken and garnished with fried shallots and herbs. This healthy breakfast is not only satisfying but also packed with flavors that awaken the senses.

Ingredients

  • Glutinous rice - 200 grams
  • Chicken breast - 250 grams
  • Chicken broth - 500 ml
  • Shallots - 2 medium, thinly sliced
  • Vegetable oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 1/4 cup, chopped
  • Fried shallots - 2 tablespoons (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. In a pot, combine the soaked rice and chicken broth. Add salt and bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes or until the rice is tender and the liquid is absorbed.
  4. While the rice cooks, heat vegetable oil in a pan over medium heat. Add sliced shallots and fry until golden brown. Remove and set aside, leaving the oil in the pan.
  5. Season the chicken breast with black pepper and salt, and cook it in the same pan for about 5-6 minutes per side until cooked through. Remove from heat and let it rest for a few minutes, then shred the chicken.
  6. Once the rice is cooked, fluff it with a fork and mix in half of the fried shallots and chopped cilantro.
  7. To serve, place a generous portion of the sticky rice on each plate, top with shredded chicken, and garnish with the remaining fried shallots, cilantro, and sesame seeds.
