Xôi gà is a delightful Vietnamese sticky rice dish topped with tender, flavorful chicken, often enjoyed as a snack or appetizer. This Halal version combines fragrant jasmine rice with aromatic spices, making it a comforting and satisfying option.

Ingredients

  • Jasmine rice - 200 grams
  • Chicken breast - 200 grams
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Chicken broth - 250 ml
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 teaspoon (Halal alternative)
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Coriander leaves - for garnish
  • Cucumber - 1, sliced (for serving)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. In a pot, heat sesame oil over medium heat and sauté the chopped shallots and minced garlic until fragrant and golden brown.
  3. Add the chicken breast to the pot and cook for 5-7 minutes until slightly browned on all sides.
  4. Pour in the chicken broth, soy sauce, fish sauce, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes until the chicken is cooked through.
  5. Remove the chicken and let it cool slightly before shredding it into bite-sized pieces.
  6. In the same pot with the remaining broth, add the soaked rice and stir. Cover and cook on low heat for about 20-25 minutes or until the rice is tender and all the liquid is absorbed.
  7. Once the rice is cooked, fluff it with a fork and let it sit covered for another 5 minutes.
  8. To serve, place a portion of the sticky rice on a plate, top with shredded chicken, and garnish with coriander leaves. Serve with cucumber slices on the side.
