Ingredients

  • Glutinous rice - 200 grams
  • Coconut milk - 200 ml
  • Sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Mung beans (split) - 50 grams
  • Shredded coconut (unsweetened) - 30 grams
  • Sesame seeds - 1 tablespoon
  • Banana leaves or parchment paper - for serving

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Rinse the mung beans and soak them in water for about 2 hours. After soaking, steam the mung beans for about 20 minutes until tender.
  3. In a pot, combine the soaked glutinous rice with coconut milk, sugar, and salt. Stir well and let it sit for about 15 minutes to absorb the flavors.
  4. Prepare a steamer with water and bring it to a boil. Line the steamer with banana leaves or parchment paper.
  5. Spread the glutinous rice mixture evenly in the steamer and cover it with more banana leaves or parchment paper. Steam for 25-30 minutes until the rice is cooked through.
  6. Once the rice is done, mix in the steamed mung beans and shredded coconut, and let it sit for 5 minutes.
  7. Serve the Xôi Chay warm, garnished with sesame seeds, and wrapped in banana leaves or on a plate.
