- Glutinous rice - 200 grams
- Coconut milk - 200 ml
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Mung beans (split) - 50 grams
- Shredded coconut (unsweetened) - 30 grams
- Sesame seeds - 1 tablespoon
- Banana leaves or parchment paper - for serving
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Rinse the mung beans and soak them in water for about 2 hours. After soaking, steam the mung beans for about 20 minutes until tender.
- In a pot, combine the soaked glutinous rice with coconut milk, sugar, and salt. Stir well and let it sit for about 15 minutes to absorb the flavors.
- Prepare a steamer with water and bring it to a boil. Line the steamer with banana leaves or parchment paper.
- Spread the glutinous rice mixture evenly in the steamer and cover it with more banana leaves or parchment paper. Steam for 25-30 minutes until the rice is cooked through.
- Once the rice is done, mix in the steamed mung beans and shredded coconut, and let it sit for 5 minutes.
- Serve the Xôi Chay warm, garnished with sesame seeds, and wrapped in banana leaves or on a plate.
