Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
  2. Heat the vegetable oil in a pan over medium heat, and add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the diced tomatoes to the pan, stirring frequently until they soften and release their juices, about 5-7 minutes.
  4. Stir in the soy sauce, sugar, salt, and black pepper, mixing well. Let the sauce simmer for 5 minutes.
  5. Gently add the cubed tofu to the pan, ensuring the tofu is coated evenly with the sauce. Simmer for an additional 10 minutes, allowing the flavors to meld.
