  • Soy sauce - 2 tablespoons
  • Vegetable broth - 100 ml
  • Cornstarch - 1 tablespoon
  • Water - 50 ml
  • Spring onions - 2 stalks, chopped
  • Sesame oil - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Drain the silken tofu and cut it into 1-inch cubes.
  2. In a non-stick pan, heat the sesame oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the sliced shiitake mushrooms to the pan and cook for 3-4 minutes until they are soft.
  4. In a bowl, mix the soy sauce, vegetable broth, cornstarch, and water until well combined.
  5. Pour the sauce mixture into the pan with the mushrooms and stir well, allowing it to thicken for about 2-3 minutes.
  6. Gently add the tofu cubes to the pan, carefully folding them into the sauce without breaking them.
  7. Cook for an additional 2-3 minutes to heat the tofu through, then season with black pepper to taste.
  8. Garnish with chopped spring onions before serving.
