Ingredients

  • Black tea leaves - 4 teaspoons
  • Water - 400 ml
  • Coconut milk - 200 ml
  • Honey or maple syrup - 2 tablespoons
  • Tapioca pearls - 100 grams
  • Ice cubes - as needed
  • Ice cream (optional) - 2 scoops

Steps

  1. Boil 400 ml of water in a pot.
  2. Once boiling, add the black tea leaves and let steep for 5 minutes.
  3. Strain the tea into a bowl and discard the leaves.
  4. In the same pot, cook the tapioca pearls according to package instructions until they are translucent and chewy, about 20 minutes.
  5. Once the tapioca pearls are done, drain and rinse them under cold water.
  6. In a separate container, mix the brewed tea with coconut milk and honey or maple syrup until well combined.
  7. Divide the cooked tapioca pearls into two serving glasses.
  8. Pour the tea mixture over the tapioca pearls, add ice cubes, and stir gently.
  9. Top with a scoop of ice cream if desired, and serve immediately.
