  • Coconut oil - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, whisk together the eggs, fish sauce, black pepper, and a pinch of salt until well combined.
  2. Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.
  3. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add the sliced shiitake mushrooms and cook for 5-7 minutes until softened and slightly browned.
  5. Pour the egg mixture over the mushrooms and sprinkle the chopped green onions on top.
  6. Cook for 3-5 minutes until the edges start to set, then carefully flip the omelette to cook the other side for another 2-3 minutes.
  7. Once fully cooked, slide the omelette onto a plate, garnish with fresh cilantro, and serve immediately.
