  • Brown sugar - 1 tablespoon
  • Shallots - 2, minced
  • Garlic - 3 cloves, minced
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Green onions - 2, chopped (for garnish)
  • Cilantro - a handful (for garnish)

Steps

  1. Heat the vegetable oil in a large pot over medium heat. Add minced shallots and garlic, sauté until fragrant.
  2. Add the pork belly cubes to the pot and cook until they are browned on all sides.
  3. Stir in the brown sugar, allowing it to caramelize slightly with the pork, then add the soy sauce and fish sauce.
  4. Pour in the coconut water and add black pepper. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 45 minutes, stirring occasionally.
  6. After 45 minutes, gently add the hard-boiled eggs to the pot, covering them with the sauce.
  7. Continue to simmer for an additional 15 minutes, allowing the eggs to absorb the flavors.
  8. Taste and adjust seasoning if necessary. Once done, remove from heat and let it sit for a few minutes.
  9. Serve hot, garnished with chopped green onions and cilantro.
