- Brown sugar - 1 tablespoon
- Shallots - 2, minced
- Garlic - 3 cloves, minced
- Black pepper - 1/2 teaspoon
- Vegetable oil - 1 tablespoon
- Green onions - 2, chopped (for garnish)
- Cilantro - a handful (for garnish)
Steps
- Heat the vegetable oil in a large pot over medium heat. Add minced shallots and garlic, sauté until fragrant.
- Add the pork belly cubes to the pot and cook until they are browned on all sides.
- Stir in the brown sugar, allowing it to caramelize slightly with the pork, then add the soy sauce and fish sauce.
- Pour in the coconut water and add black pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 45 minutes, stirring occasionally.
- After 45 minutes, gently add the hard-boiled eggs to the pot, covering them with the sauce.
- Continue to simmer for an additional 15 minutes, allowing the eggs to absorb the flavors.
- Taste and adjust seasoning if necessary. Once done, remove from heat and let it sit for a few minutes.
- Serve hot, garnished with chopped green onions and cilantro.
