Ingredients

  • Beef brisket - 300 grams, cut into 2.5 cm cubes
  • Coconut water - 250 ml
  • Fish sauce - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Shallots - 2, thinly sliced
  • Black pepper - 1 teaspoon
  • Star anise - 1
  • Cilantro - for garnish
  • Green onions - 2, chopped

Steps

  1. In a large pot, heat a tablespoon of oil over medium heat and sauté the minced garlic and sliced shallots until fragrant.
  2. Add the beef cubes to the pot and brown them on all sides.
  3. Stir in the fish sauce, soy sauce, brown sugar, black pepper, and star anise.
  4. Pour in the coconut water, ensuring the beef is submerged. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, or until the beef is tender.
  6. Remove the lid and increase the heat to medium-high to reduce the sauce slightly, about 10-15 minutes.
  7. Once the sauce has thickened, remove from heat and discard the star anise.
  8. Serve hot, garnished with chopped cilantro and green onions.
