Ingredients

  • Pork belly, kosher - 300 grams
  • Shallots - 2 medium, finely sliced

  • Coconut water - 200 ml
  • Soy sauce (kosher) - 3 tablespoons
  • Brown sugar - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Fish sauce (kosher) - 1 tablespoon
  • Star anise - 1 piece
  • Cooking oil - 1 tablespoon
  • Green onions - 2 stalks, chopped for garnish

Steps

  1. Cut the pork belly into 2 cm cubes and set aside.
  2. In a large skillet or pot, heat the cooking oil over medium heat and sauté the shallots until translucent.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Increase the heat to medium-high and add the pork belly cubes, cooking until they are browned on all sides.
  5. Stir in the soy sauce, brown sugar, black pepper, and fish sauce, ensuring the pork is well coated.
  6. Pour in the coconut water and add the star anise. Bring to a gentle boil.
  7. Reduce the heat to low, cover, and let it simmer for 30-40 minutes until the pork is tender and the sauce is thickened.
  8. Taste and adjust seasoning as necessary, then remove from heat.
  9. Serve hot, garnished with chopped green onions, alongside steamed rice.
