- Soy sauce (kosher) - 3 tablespoons
- Brown sugar - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Fish sauce (kosher) - 1 tablespoon
- Star anise - 1 piece
- Cooking oil - 1 tablespoon
- Green onions - 2 stalks, chopped for garnish
Steps
- Cut the pork belly into 2 cm cubes and set aside.
- In a large skillet or pot, heat the cooking oil over medium heat and sauté the shallots until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Increase the heat to medium-high and add the pork belly cubes, cooking until they are browned on all sides.
- Stir in the soy sauce, brown sugar, black pepper, and fish sauce, ensuring the pork is well coated.
- Pour in the coconut water and add the star anise. Bring to a gentle boil.
- Reduce the heat to low, cover, and let it simmer for 30-40 minutes until the pork is tender and the sauce is thickened.
- Taste and adjust seasoning as necessary, then remove from heat.
- Serve hot, garnished with chopped green onions, alongside steamed rice.
