  • Pork shoulder - 300 grams
  • Lemongrass - 2 stalks, finely chopped
  • Garlic - 3 cloves, minced
  • Shallots - 1 medium, minced
  • Fish sauce - 2 tablespoons
  • Soy sauce (low sodium) - 1 tablespoon
  • Erythritol (or preferred keto sweetener) - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. In a mixing bowl, combine the finely chopped lemongrass, minced garlic, minced shallots, fish sauce, soy sauce, erythritol, black pepper, olive oil, and lime juice to create the marinade.
  2. Cut the pork shoulder into thin slices, about 1 cm thick, and add it to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 15 minutes, preferably 1 hour for deeper flavor.
  3. Preheat your grill or a grill pan over medium-high heat.
  4. Remove the pork from the marinade and thread the slices onto skewers, if desired.
  5. Grill the pork for about 4-5 minutes on each side, or until cooked through and slightly charred.
  6. Once cooked, remove from the grill and let it rest for a couple of minutes.
  7. Serve hot, garnished with fresh cilantro and with lime wedges on the side.
