- Lemongrass - 2 stalks, finely chopped
- Garlic - 3 cloves, minced
- Shallots - 1 medium, minced
- Fish sauce - 2 tablespoons
- Soy sauce (low sodium) - 1 tablespoon
- Erythritol (or preferred keto sweetener) - 1 tablespoon
- Black pepper - 1 teaspoon
- Olive oil - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- In a mixing bowl, combine the finely chopped lemongrass, minced garlic, minced shallots, fish sauce, soy sauce, erythritol, black pepper, olive oil, and lime juice to create the marinade.
- Cut the pork shoulder into thin slices, about 1 cm thick, and add it to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 15 minutes, preferably 1 hour for deeper flavor.
- Preheat your grill or a grill pan over medium-high heat.
- Remove the pork from the marinade and thread the slices onto skewers, if desired.
- Grill the pork for about 4-5 minutes on each side, or until cooked through and slightly charred.
- Once cooked, remove from the grill and let it rest for a couple of minutes.
- Serve hot, garnished with fresh cilantro and with lime wedges on the side.
