Ingredients

  • Pork shoulder - 300 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Fish sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Shrimp paste (Mắm Tôm) - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili pepper - 1, finely chopped
  • Fresh herbs (mint, cilantro) - for garnish

Steps

  1. Cut the pork shoulder into thin strips, about 1 cm thick.
  2. In a bowl, combine minced garlic, chopped shallots, fish sauce, brown sugar, black pepper, and vegetable oil to create a marinade.
  3. Add the pork strips to the marinade, mix well, and let it marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Skewer the marinated pork strips onto soaked bamboo skewers.
  6. Grill the skewers for about 5-7 minutes on each side or until cooked through and slightly charred.
  7. While the pork is grilling, prepare the dipping sauce by mixing the shrimp paste, lime juice, and chopped chili pepper in a small bowl.
  8. Serve the grilled pork skewers hot, garnished with fresh herbs, alongside the shrimp paste dipping sauce.
