- Pork shoulder - 300 grams
- Garlic - 3 cloves, minced
- Shallots - 2, minced
- Fish sauce - 3 tablespoons
- Brown sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Rice paper - 4 sheets
- Lettuce leaves - 4 large
- Cilantro - 1/2 cup, chopped
- Mint leaves - 1/2 cup, chopped
- Carrot - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Peanuts - 2 tablespoons, crushed
- Lime - 1, cut into wedges
Steps
- In a bowl, combine minced garlic, shallots, fish sauce, brown sugar, and black pepper to create a marinade.
- Slice the pork shoulder into thin strips and add to the marinade, mixing well to coat. Allow to marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat. Grill the marinated pork strips for about 6-8 minutes, turning occasionally until cooked through and slightly charred.
- While the pork is grilling, prepare the fresh vegetables and herbs: julienne the carrot and cucumber, and chop the cilantro and mint leaves.
- To assemble, soak a rice paper sheet in warm water for about 10-15 seconds until pliable, then lay it flat on a clean surface.
- Place a lettuce leaf on the rice paper, followed by a few strips of grilled pork, some julienned carrot and cucumber, and a sprinkle of cilantro and mint.
- Wrap the rice paper tightly around the filling, folding in the sides as you go. Repeat with the remaining rice paper and filling.
- Serve the rolls with crushed peanuts and lime wedges on the side for added flavor.
