Ingredients

  • Pork shoulder - 300 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2, minced
  • Fish sauce - 3 tablespoons
  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Rice paper - 4 sheets
  • Lettuce leaves - 4 large
  • Cilantro - 1/2 cup, chopped
  • Mint leaves - 1/2 cup, chopped
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Peanuts - 2 tablespoons, crushed
  • Lime - 1, cut into wedges

Steps

  1. In a bowl, combine minced garlic, shallots, fish sauce, brown sugar, and black pepper to create a marinade.
  2. Slice the pork shoulder into thin strips and add to the marinade, mixing well to coat. Allow to marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat. Grill the marinated pork strips for about 6-8 minutes, turning occasionally until cooked through and slightly charred.
  4. While the pork is grilling, prepare the fresh vegetables and herbs: julienne the carrot and cucumber, and chop the cilantro and mint leaves.
  5. To assemble, soak a rice paper sheet in warm water for about 10-15 seconds until pliable, then lay it flat on a clean surface.
  6. Place a lettuce leaf on the rice paper, followed by a few strips of grilled pork, some julienned carrot and cucumber, and a sprinkle of cilantro and mint.
  7. Wrap the rice paper tightly around the filling, folding in the sides as you go. Repeat with the remaining rice paper and filling.
  8. Serve the rolls with crushed peanuts and lime wedges on the side for added flavor.
