Ingredients

  • Pork shoulder - 300 grams
  • Chao (fermented tofu) - 100 grams
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Shallots (minced) - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro (for garnish) - to taste

Steps

  1. Cut the pork shoulder into thin slices, about 0.5 cm thick.
  2. In a mixing bowl, combine the chao, soy sauce, fish sauce, brown sugar, minced garlic, minced shallots, black pepper, and vegetable oil to create the marinade.
  3. Add the sliced pork to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Remove the pork from the marinade, letting excess marinade drip off. Discard the remaining marinade.
  6. Grill the pork slices for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
  7. Once cooked, remove from the grill and let rest for a couple of minutes.
  8. Serve the grilled pork with a drizzle of lime juice and garnish with fresh cilantro.
