- Chao (fermented tofu) - 100 grams
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Brown sugar - 1 tablespoon
- Garlic (minced) - 2 cloves
- Shallots (minced) - 1 tablespoon
- Black pepper - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh cilantro (for garnish) - to taste
Steps
- Cut the pork shoulder into thin slices, about 0.5 cm thick.
- In a mixing bowl, combine the chao, soy sauce, fish sauce, brown sugar, minced garlic, minced shallots, black pepper, and vegetable oil to create the marinade.
- Add the sliced pork to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
- Preheat your grill or grill pan over medium-high heat.
- Remove the pork from the marinade, letting excess marinade drip off. Discard the remaining marinade.
- Grill the pork slices for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
- Once cooked, remove from the grill and let rest for a couple of minutes.
- Serve the grilled pork with a drizzle of lime juice and garnish with fresh cilantro.
