  • Black pepper - 1 teaspoon

  • Fresh cilantro - 2 tablespoons, chopped
  • Lime wedges - for serving
  • Rice paper - for wrapping (optional)

Steps

  1. Cut the pork shoulder into thin slices, about 1 cm thick.
  2. In a mixing bowl, combine minced garlic, chopped shallots, lemon juice, fish sauce, brown sugar, black pepper, chili flakes, and vegetable oil to create the marinade.
  3. Add the sliced pork to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
