Ingredients

  • Pork shoulder - 250 grams
  • Garlic - 2 cloves, minced
  • Shallots - 1 medium, finely chopped
  • Fish sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Gluten-free burger buns - 2
  • Cucumber - 1/2, thinly sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Lettuce leaves - 2
  • Sriracha sauce - to taste
  • Mayonnaise - 2 tablespoons

Steps

  1. In a bowl, mix together minced garlic, chopped shallots, fish sauce, brown sugar, and black pepper to create a marinade.
  2. Cut the pork shoulder into thin strips and add to the marinade. Cover and let it marinate in the refrigerator for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Grill the marinated pork for about 4-5 minutes on each side, or until cooked through and slightly charred.
  5. While the pork is grilling, toast the gluten-free burger buns on the grill until lightly golden.
  6. Assemble the burgers by spreading mayonnaise on the bottom half of each bun, adding a layer of lettuce, the grilled pork, cucumber slices, chopped cilantro, and mint.
  7. Drizzle with sriracha sauce to taste, then top with the other half of the bun.
  8. Serve immediately with extra cucumber slices on the side.
