Ingredients

  • Pork shoulder - 250 grams
  • Garlic - 2 cloves, minced

  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Rice vermicelli - 100 grams
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned
  • Fresh mint - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Lettuce leaves - 4 leaves, for serving
  • Lime - 1, cut into wedges

Steps

  1. In a bowl, combine minced garlic, shallots, soy sauce, fish sauce, brown sugar, black pepper, and vegetable oil to create a marinade.
  2. Cut the pork shoulder into thin slices and add it to the marinade. Mix well and let it marinate for at least 15 minutes.
  3. While the pork is marinating, cook the rice vermicelli according to package instructions, then drain and rinse under cold water.
  4. Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated pork slices and grill for about 3-4 minutes on each side or until cooked through and slightly charred.
  5. Prepare the serving plates by placing a bed of rice vermicelli, followed by grilled pork slices, and top with julienned cucumber, carrot, chopped mint, and cilantro.
  6. Serve with fresh lettuce leaves and lime wedges on the side for wrapping and additional flavor.
