- Pork shoulder - 300 grams
- Garlic - 3 cloves, minced
- Shallots - 2, minced
- Fish sauce - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sweetener (erythritol or stevia) - 1 tablespoon
- Lime juice - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Rice vinegar - 1 tablespoon
- Cilantro - 20 grams, chopped
- Mint leaves - 20 grams, chopped
- Lettuce leaves - 4 large leaves
- Cucumber - 1 small, julienned
Steps
- In a bowl, combine minced garlic, shallots, fish sauce, soy sauce, sweetener, lime juice, black pepper, and rice vinegar to create the marinade.
- Cut the pork shoulder into thin slices and add to the marinade. Mix well, cover, and let it marinate in the refrigerator for at least 20 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Remove the pork from the marinade and grill for about 4-5 minutes on each side, or until cooked through and slightly charred.
- While the pork is grilling, prepare the fresh herbs, lettuce, and cucumber.
- Once the pork is done, let it rest for a couple of minutes before slicing it into bite-sized pieces.
- To serve, place a few lettuce leaves on a plate, top with the grilled pork, and garnish with cilantro and mint. Add julienned cucumber on the side.
