Ingredients

  • Pork shoulder - 300 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2, minced
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sweetener (erythritol or stevia) - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Rice vinegar - 1 tablespoon
  • Cilantro - 20 grams, chopped
  • Mint leaves - 20 grams, chopped
  • Lettuce leaves - 4 large leaves
  • Cucumber - 1 small, julienned

Steps

  1. In a bowl, combine minced garlic, shallots, fish sauce, soy sauce, sweetener, lime juice, black pepper, and rice vinegar to create the marinade.
  2. Cut the pork shoulder into thin slices and add to the marinade. Mix well, cover, and let it marinate in the refrigerator for at least 20 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the pork from the marinade and grill for about 4-5 minutes on each side, or until cooked through and slightly charred.
  5. While the pork is grilling, prepare the fresh herbs, lettuce, and cucumber.
  6. Once the pork is done, let it rest for a couple of minutes before slicing it into bite-sized pieces.
  7. To serve, place a few lettuce leaves on a plate, top with the grilled pork, and garnish with cilantro and mint. Add julienned cucumber on the side.
