Steps
- In a pot, boil the eggs in water for 10 minutes, then cool them in ice water, peel, and set aside.
- Cut the pork belly into bite-sized pieces.
- In a large skillet, heat the cooking oil over medium heat. Add the sliced shallots and minced garlic, sautéing until fragrant.
- Add the pork belly to the skillet, browning on all sides for about 5-7 minutes.
- Stir in the coconut aminos, fish sauce, coconut sugar, and black pepper, mixing well.
- Pour in the water, bring to a boil, then reduce the heat to low and cover. Simmer for 30 minutes.
- Add the boiled eggs to the skillet, allowing them to absorb the flavors. Cook for an additional 10 minutes.
- Serve hot, garnished with chopped green onions.
