  • Shallots - 2, thinly sliced
  • Black pepper - 1 teaspoon
  • Water - 250 ml
  • Green onions - 2, chopped (for garnish)
  • Cooking oil - 1 tablespoon

Steps

  1. In a pot, boil the eggs in water for 10 minutes, then cool them in ice water, peel, and set aside.
  2. Cut the pork belly into bite-sized pieces.
  3. In a large skillet, heat the cooking oil over medium heat. Add the sliced shallots and minced garlic, sautéing until fragrant.
  4. Add the pork belly to the skillet, browning on all sides for about 5-7 minutes.
  5. Stir in the coconut aminos, fish sauce, coconut sugar, and black pepper, mixing well.
  6. Pour in the water, bring to a boil, then reduce the heat to low and cover. Simmer for 30 minutes.
  7. Add the boiled eggs to the skillet, allowing them to absorb the flavors. Cook for an additional 10 minutes.
  8. Serve hot, garnished with chopped green onions.
