Ingredients

  • Pork belly - 300 grams
  • Eggs - 2 large
  • Coconut water - 200 ml
  • Sugar - 1 tablespoon
  • Fish sauce - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Shallots - 2, sliced
  • Garlic - 3 cloves, minced
  • Black pepper - 1 teaspoon
  • Green onions - 2, chopped for garnish
  • Cooking oil - 1 tablespoon

Steps

  1. Start by boiling the eggs in a pot of water for 8-10 minutes until hard-boiled. Once cooked, remove the eggs, cool them under cold water, and peel.
  2. Cut the pork belly into bite-sized pieces (about 2 cm).
  3. In a pan, heat 1 tablespoon of cooking oil over medium heat. Add the sliced shallots and minced garlic, sautéing until fragrant and golden.
  4. Add the pork belly to the pan and cook until browned on all sides, about 5-7 minutes.
  5. Sprinkle the sugar over the pork and stir until the sugar caramelizes and coats the pork.
  6. Add the fish sauce, soy sauce, black pepper, and coconut water to the pan. Bring to a boil, then reduce the heat to low and simmer for 30-40 minutes until the pork is tender and the sauce thickens.
  7. In the last 10 minutes of cooking, add the boiled eggs to the pan, allowing them to absorb the flavors of the sauce.
  8. Once cooked, serve the dish hot, garnished with chopped green onions.
