- Black pepper - 1 teaspoon
- Green onions - 2, chopped for garnish
- Cooking oil - 1 tablespoon
Steps
- Start by boiling the eggs in a pot of water for 8-10 minutes until hard-boiled. Once cooked, remove the eggs, cool them under cold water, and peel.
- Cut the pork belly into bite-sized pieces (about 2 cm).
- In a pan, heat 1 tablespoon of cooking oil over medium heat. Add the sliced shallots and minced garlic, sautéing until fragrant and golden.
- Add the pork belly to the pan and cook until browned on all sides, about 5-7 minutes.
- Sprinkle the sugar over the pork and stir until the sugar caramelizes and coats the pork.
- Add the fish sauce, soy sauce, black pepper, and coconut water to the pan. Bring to a boil, then reduce the heat to low and simmer for 30-40 minutes until the pork is tender and the sauce thickens.
- In the last 10 minutes of cooking, add the boiled eggs to the pan, allowing them to absorb the flavors of the sauce.
- Once cooked, serve the dish hot, garnished with chopped green onions.
