Ingredients

  • Pork shoulder - 300 grams
  • Garlic - 4 cloves, minced
  • Shallots - 2, finely chopped
  • Brown sugar - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Fresh cilantro - for garnish
  • Lettuce leaves - for serving
  • Rice noodles - 100 grams, cooked

Steps

  1. In a mixing bowl, combine minced garlic, chopped shallots, brown sugar, fish sauce, soy sauce, black pepper, lemon juice, and vegetable oil to create a marinade.
  2. Cut the pork shoulder into thin slices (about 1 cm thick) and add to the marinade, ensuring all pieces are well coated. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Remove the pork from the marinade and let any excess marinade drip off. Grill the pork slices for about 4-5 minutes on each side, or until cooked through and slightly charred.
  5. Once cooked, remove the pork from the grill and let it rest for a few minutes before slicing.
  6. Serve the grilled pork on a plate garnished with fresh cilantro, alongside lettuce leaves and cooked rice noodles.
