Ingredients

  • Large shrimp (peeled and deveined) - 300 grams
  • Scallions (finely chopped) - 50 grams
  • Vegetable oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Chili flakes (optional) - 1/4 teaspoon

Steps

  1. In a bowl, combine the vegetable oil, minced garlic, fish sauce, lime juice, black pepper, salt, and chili flakes to create the marinade.
  2. Add the peeled and deveined shrimp to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  3. While the shrimp marinates, prepare a grill or grill pan over medium-high heat.
  4. Once the grill is hot, skewer the marinated shrimp on skewers (if using wooden skewers, soak them in water for 30 minutes beforehand).
  5. Grill the shrimp for about 2-3 minutes on each side or until they turn pink and opaque.
  6. In a separate small pan, heat 1 tablespoon of vegetable oil over medium heat and add the chopped scallions. Cook for about 1-2 minutes until tender and fragrant.
  7. Remove the shrimp from the grill and drizzle the warm scallion oil over the grilled shrimp before serving.
