Ingredients

  • Large shrimp - 400 grams (peeled and deveined)
  • Butter - 50 grams (unsalted)
  • Garlic - 4 cloves (minced)
  • Lime juice - 30 ml (freshly squeezed)
  • Fish sauce - 15 ml
  • Sugar - 10 grams
  • Black pepper - 1 teaspoon
  • Chili flakes - ½ teaspoon (optional)
  • Fresh cilantro - 10 grams (chopped for garnish)
  • Lime wedges - for serving

Steps

  1. In a small saucepan, melt the butter over low heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat and stir in lime juice, fish sauce, sugar, black pepper, and chili flakes if using.
  2. In a large bowl, combine the shrimp with the garlic butter marinade and toss to coat evenly. Allow the shrimp to marinate for at least 15 minutes to absorb the flavors.
  3. Preheat a grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers for easy grilling.
  4. Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook.
  5. Remove from the grill and garnish with chopped cilantro. Serve with lime wedges on the side.
