  • Ginger - 1 tablespoon, grated
  • Thai bird chili - 1, sliced (optional)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh coriander - for garnish
  • Lime - 1, cut into wedges

Steps

  1. In a pot, combine coconut water, bruised lemongrass, minced garlic, grated ginger, salt, and black pepper. Bring to a gentle simmer over medium heat.
  2. Once simmering, add the cleaned shrimp to the pot, ensuring they are submerged in the coconut water.
  3. Cover the pot and let the shrimp steam for about 8-10 minutes, or until they turn pink and opaque.
  4. Remove the pot from heat and let it sit for a few minutes to allow the flavors to meld.
  5. Serve the shrimp hot, garnished with fresh coriander and lime wedges on the side. Optionally, add sliced Thai bird chili for extra heat.
