Ingredients

  • Lobster - 500 grams (about 1 medium lobster)
  • Scallions - 50 grams (about 4-5 stalks)
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fish sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Lime - 1, for garnish
  • Chili - 1 small, sliced (optional, for garnish)

Steps

  1. Preheat the grill to medium-high heat.
  2. Carefully split the lobster in half lengthwise using a sharp knife, removing the intestinal tract and any inedible parts.
  3. Clean the lobster shells and place them on a tray, shell side down.
  4. In a small bowl, mix together the vegetable oil, minced garlic, fish sauce, black pepper, and a pinch of salt to create the marinade.
  5. Brush the marinade generously over the lobster meat, ensuring it gets into the cracks and crevices.
  6. Chop the scallions finely and set aside.
  7. Grill the lobster halves shell side down for about 10-12 minutes, or until the meat is opaque and cooked through.
  8. In the last 2 minutes of grilling, sprinkle the chopped scallions on top of the lobster meat for an aromatic finish.
  9. Remove the lobster from the grill and let it rest for a couple of minutes.
  10. Serve the grilled lobster with lime wedges and sliced chili for garnish.
