Ingredients

  • Lobster - 2 whole (about 500g each)
  • Butter - 100g
  • Garlic - 4 cloves, minced
  • Fresh coriander - 2 tablespoons, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the grill to medium-high heat.
  2. Carefully split the lobsters in half lengthwise and remove the tomalley (green substance) if desired.
  3. In a small saucepan, melt the butter over low heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Stir in the coriander, lime juice, fish sauce, chili flakes, salt, and black pepper. Mix well and remove from heat.
  5. Place the lobster halves on the grill, flesh side up. Brush generously with the garlic butter mixture.
  6. Grill the lobster for about 8-10 minutes, basting occasionally with more garlic butter, until the flesh is opaque and cooked through.
  7. Remove from the grill and serve immediately, drizzling any remaining garlic butter over the top.
