- Fresh cilantro (chopped) - 2 tablespoons
- Vegetable oil (for frying) - 500 ml
Steps
- In a mixing bowl, combine the rice flour, cornstarch, salt, black pepper, garlic powder, and chopped cilantro.
- In a separate bowl, whisk the egg and water together until well combined.
- Gradually add the egg mixture to the dry ingredients, stirring until a smooth batter forms.
- Heat the vegetable oil in a deep pan over medium-high heat until it reaches 180°C (350°F).
- Dip each shrimp into the batter, ensuring it is fully coated, and carefully place it into the hot oil.
- Fry the shrimp in batches for about 3-4 minutes or until they are golden brown and crispy, turning them halfway through.
- Using a slotted spoon, remove the fried shrimp and place them on paper towels to drain excess oil.
