Ingredients

  • Shrimp (large, peeled and deveined) - 300 grams
  • Rice flour - 100 grams
  • Cornstarch - 50 grams
  • Garlic (minced) - 3 cloves
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Egg - 1 large
  • Water - 100 ml
  • Vegetable oil (for frying) - 500 ml
  • Lime wedges - for serving
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, mix the rice flour, cornstarch, minced garlic, black pepper, salt, and turmeric powder.
  2. In another bowl, beat the egg and add water, mixing well.
  3. Combine the wet and dry ingredients to create a batter; ensure it is smooth and thick enough to coat the shrimp.
  4. Dip each shrimp into the batter, allowing excess to drip off.
  5. In a deep frying pan, heat the vegetable oil over medium-high heat until hot.
  6. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding.
  7. Fry for about 3-4 minutes or until the shrimp are golden brown and crispy, turning halfway through.
  8. Remove the shrimp with a slotted spoon and place on paper towels to drain excess oil.
  9. Serve hot, garnished with fresh cilantro and lime wedges on the side.
