- Asparagus - 200 grams, chopped
- Vegetable broth - 500 ml
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Onion - 1 small, sliced
- Carrot - 1 medium, julienned
- Lime - 1, juiced
- Fresh cilantro - 30 grams, chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat sesame oil over medium heat and sauté the onions, garlic, and ginger until fragrant, about 2-3 minutes.
- Add the chopped asparagus and julienned carrot to the pot and sauté for another 5 minutes until they start to soften.
- Pour in the vegetable broth and bring to a gentle boil. Reduce the heat and let it simmer for about 10 minutes.
- Stir in the soy sauce, lime juice, and season with salt and black pepper to taste.
- Remove from heat and stir in the chopped cilantro before serving.
