Ingredients

  • Asparagus - 200 grams, chopped
  • Vegetable broth - 500 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Onion - 1 small, sliced
  • Carrot - 1 medium, julienned
  • Lime - 1, juiced
  • Fresh cilantro - 30 grams, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat sesame oil over medium heat and sauté the onions, garlic, and ginger until fragrant, about 2-3 minutes.
  2. Add the chopped asparagus and julienned carrot to the pot and sauté for another 5 minutes until they start to soften.
  3. Pour in the vegetable broth and bring to a gentle boil. Reduce the heat and let it simmer for about 10 minutes.
  4. Stir in the soy sauce, lime juice, and season with salt and black pepper to taste.
  5. Remove from heat and stir in the chopped cilantro before serving.
