- Bitter melon - 1 medium-sized (about 200g)
- Vegetable broth - 500 ml
- Mushrooms (shiitake or button) - 100g, sliced
- Carrot - 1 medium (about 70g), diced
- Tomato - 1 medium (about 100g), chopped
- Garlic - 2 cloves, minced
- Onion - 1 small (about 50g), chopped
- Fresh cilantro - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime - 1, juiced
- Olive oil - 1 tablespoon
Steps
- Start by washing the bitter melon and cutting it in half lengthwise. Remove the seeds and slice it into thin half-moons.
- In a medium pot, heat the olive oil over medium heat and sauté the onion and garlic until fragrant and translucent, about 3-4 minutes.
- Add the diced carrot and sliced mushrooms to the pot, cooking for another 5 minutes until they soften.
- Stir in the chopped tomato and cook for an additional 2 minutes.
- Pour in the vegetable broth and add the sliced bitter melon, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
- Once the bitter melon is tender, remove the pot from heat and stir in the lime juice and chopped cilantro.
- Serve hot, garnished with additional cilantro if desired.
