  • Bitter melon - 1 medium-sized (about 200g)
  • Vegetable broth - 500 ml
  • Mushrooms (shiitake or button) - 100g, sliced
  • Carrot - 1 medium (about 70g), diced
  • Tomato - 1 medium (about 100g), chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small (about 50g), chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon

Steps

  1. Start by washing the bitter melon and cutting it in half lengthwise. Remove the seeds and slice it into thin half-moons.
  2. In a medium pot, heat the olive oil over medium heat and sauté the onion and garlic until fragrant and translucent, about 3-4 minutes.
  3. Add the diced carrot and sliced mushrooms to the pot, cooking for another 5 minutes until they soften.
  4. Stir in the chopped tomato and cook for an additional 2 minutes.
  5. Pour in the vegetable broth and add the sliced bitter melon, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
  6. Once the bitter melon is tender, remove the pot from heat and stir in the lime juice and chopped cilantro.
  7. Serve hot, garnished with additional cilantro if desired.
