- Coconut milk - 400 ml
- Vegetable broth - 500 ml
- Taro root - 150 grams, diced
- Mushrooms (preferably shiitake) - 100 grams, sliced
- Carrot - 100 grams, julienned
- Green onions - 2 stalks, chopped
- Fresh cilantro - 10 grams, chopped
- Ginger - 10 grams, grated
- Garlic - 2 cloves, minced
- Lime - 1, juiced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili flakes - 1/4 teaspoon (optional)
Steps
- In a medium pot, heat a splash of vegetable broth over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the diced taro root and sliced mushrooms to the pot, stirring for 2-3 minutes until they begin to soften.
- Pour in the remaining vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 10 minutes, or until the taro is tender.
- Stir in the coconut milk, julienned carrot, salt, black pepper, and chili flakes (if using). Continue to simmer for an additional 5 minutes.
- Remove from heat and stir in the lime juice, chopped green onions, and cilantro.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
