Ingredients

  • Coconut milk - 400 ml
  • Vegetable broth - 500 ml
  • Taro root - 150 grams, diced
  • Mushrooms (preferably shiitake) - 100 grams, sliced
  • Carrot - 100 grams, julienned
  • Green onions - 2 stalks, chopped
  • Fresh cilantro - 10 grams, chopped
  • Ginger - 10 grams, grated
  • Garlic - 2 cloves, minced
  • Lime - 1, juiced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili flakes - 1/4 teaspoon (optional)

Steps

  1. In a medium pot, heat a splash of vegetable broth over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  2. Add the diced taro root and sliced mushrooms to the pot, stirring for 2-3 minutes until they begin to soften.
  3. Pour in the remaining vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 10 minutes, or until the taro is tender.
  4. Stir in the coconut milk, julienned carrot, salt, black pepper, and chili flakes (if using). Continue to simmer for an additional 5 minutes.
  5. Remove from heat and stir in the lime juice, chopped green onions, and cilantro.
  6. Serve hot, garnished with additional cilantro and lime wedges if desired.
