- Coconut milk - 400 ml
- Vegetable broth - 500 ml
- Tofu - 200 grams, firm, cubed
- Mushrooms - 100 grams, sliced
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Fresh cilantro - 30 grams, chopped
- Green onions - 2, sliced
- Lime - 1, juiced
- Soy sauce - 2 tablespoons (kosher)
- Vegetable oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, minced
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1-2 minutes.
- Add the sliced mushrooms, carrot, and bell pepper to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.
- Pour in the vegetable broth and bring to a simmer. Add the cubed tofu and let it cook for another 5 minutes.
- Stir in the coconut milk and soy sauce, and let the soup simmer for an additional 5 minutes. Season with salt and black pepper to taste.
- Remove from heat and stir in the lime juice and chopped cilantro.
- Serve hot, garnished with sliced green onions and additional cilantro as desired.
