  • Coconut milk - 400 ml
  • Vegetable broth - 500 ml
  • Tofu - 200 grams, firm, cubed
  • Mushrooms - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Fresh cilantro - 30 grams, chopped
  • Green onions - 2, sliced
  • Lime - 1, juiced
  • Soy sauce - 2 tablespoons (kosher)
  • Vegetable oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1-2 minutes.
  2. Add the sliced mushrooms, carrot, and bell pepper to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.
  3. Pour in the vegetable broth and bring to a simmer. Add the cubed tofu and let it cook for another 5 minutes.
  4. Stir in the coconut milk and soy sauce, and let the soup simmer for an additional 5 minutes. Season with salt and black pepper to taste.
  5. Remove from heat and stir in the lime juice and chopped cilantro.
  6. Serve hot, garnished with sliced green onions and additional cilantro as desired.
