- Vegetable broth - 500 ml
- Carrot - 1 medium, sliced
- Daikon radish - 100 grams, sliced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Broccoli - 100 grams, cut into florets
- Green beans - 100 grams, trimmed and cut into 2 cm pieces
- Tofu - 150 grams, cubed
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat a splash of vegetable broth over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
- Add the sliced carrots and daikon radish to the pot and stir for another 5 minutes.
- Pour in the vegetable broth and bring to a simmer. Once boiling, add the sliced mushrooms, broccoli florets, and green beans.
- Reduce heat and let it simmer for about 10 minutes, or until the vegetables are just tender.
- Add the cubed tofu and soy sauce, and simmer for an additional 5 minutes to heat through.
- Remove from heat, stir in the lime juice, and season with salt and black pepper to taste.
- Serve hot, garnished with fresh cilantro.
