Ingredients

  • Vegetable broth - 500 ml
  • Carrot - 1 medium, sliced
  • Daikon radish - 100 grams, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Broccoli - 100 grams, cut into florets
  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Tofu - 150 grams, cubed
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat a splash of vegetable broth over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
  2. Add the sliced carrots and daikon radish to the pot and stir for another 5 minutes.
  3. Pour in the vegetable broth and bring to a simmer. Once boiling, add the sliced mushrooms, broccoli florets, and green beans.
  4. Reduce heat and let it simmer for about 10 minutes, or until the vegetables are just tender.
  5. Add the cubed tofu and soy sauce, and simmer for an additional 5 minutes to heat through.
  6. Remove from heat, stir in the lime juice, and season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
