Ingredients

  • Fresh clams - 500 grams
  • Chicken or vegetable broth - 500 ml
  • Ginger - 10 grams, sliced
  • Garlic - 2 cloves, minced
  • Shallots - 2, finely chopped
  • Tomato - 1 medium, diced
  • Carrot - 1 small, julienned
  • Spring onions - 2, chopped
  • Cilantro - 10 grams, chopped
  • Fish sauce - 1 tablespoon
  • Lime - 1, juiced
  • Black pepper - to taste
  • Salt - to taste
  • Vegetable oil - 1 tablespoon

Steps

  1. Rinse the fresh clams under cold water to remove any sand or grit.
  2. In a pot, heat the vegetable oil over medium heat. Add the minced garlic, chopped shallots, and sliced ginger, sautéing until fragrant.
  3. Add the diced tomato and julienned carrot to the pot, stirring for about 3 minutes until softened.
  4. Pour in the chicken or vegetable broth and bring to a simmer.
  5. Add the cleaned clams to the pot, cover, and cook for 5-7 minutes or until the clams open up.
  6. Stir in the fish sauce, lime juice, and chopped spring onions. Season with salt and black pepper to taste.
  7. Remove from heat, and garnish with chopped cilantro before serving.
