- Garlic - 2 cloves, minced
- Shallots - 2, finely chopped
- Tomato - 1 medium, diced
- Carrot - 1 small, julienned
- Spring onions - 2, chopped
- Cilantro - 10 grams, chopped
- Fish sauce - 1 tablespoon
- Lime - 1, juiced
- Black pepper - to taste
- Salt - to taste
- Vegetable oil - 1 tablespoon
Steps
- Rinse the fresh clams under cold water to remove any sand or grit.
- In a pot, heat the vegetable oil over medium heat. Add the minced garlic, chopped shallots, and sliced ginger, sautéing until fragrant.
- Add the diced tomato and julienned carrot to the pot, stirring for about 3 minutes until softened.
- Pour in the chicken or vegetable broth and bring to a simmer.
- Add the cleaned clams to the pot, cover, and cook for 5-7 minutes or until the clams open up.
- Stir in the fish sauce, lime juice, and chopped spring onions. Season with salt and black pepper to taste.
- Remove from heat, and garnish with chopped cilantro before serving.
