  • Water - 300 ml

  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, sliced thinly
  • Vegetable oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - a handful, chopped
  • Lime - 1, cut into wedges
  • Chili peppers - 1, sliced (optional for heat)
  • Tofu - 100 grams, cubed (optional)

Steps

  1. In a pot, heat the vegetable oil over medium heat. Add the shallots, garlic, and ginger, sautéing until fragrant and translucent.
  2. Add the sliced straw mushrooms and carrot to the pot, stirring for about 5 minutes until they soften slightly.
  3. Pour in the vegetable broth and water, bringing the mixture to a gentle boil.
  4. Add the soy sauce, salt, and black pepper, adjusting to taste. If using, add the cubed tofu at this stage.
  5. Reduce the heat and let the soup simmer for 15 minutes, allowing the flavors to meld together.
  6. Remove from heat and stir in the chopped cilantro. Serve hot with lime wedges and sliced chili peppers on the side for garnish.
