- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Green onions - 2 stalks, chopped
- Salt - to taste

- Chili flakes - optional, to taste
Steps
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the sliced shiitake, oyster, and button mushrooms to the pot. Cook for 5-7 minutes until the mushrooms are soft and have released their moisture.
- Pour in the vegetable broth and bring the mixture to a gentle boil. Add the soy sauce, lime juice, salt, and black pepper to taste.
- Reduce the heat and let the soup simmer for 10 minutes, allowing the flavors to meld together.
- Remove the pot from heat and stir in the chopped cilantro and green onions. If desired, sprinkle with chili flakes for added heat.
- Serve the soup hot, garnished with additional cilantro and green onions if desired.
