  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Sesame oil - 1 teaspoon
  • Chili flakes - optional, to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  2. Add the sliced shiitake, oyster, and button mushrooms to the pot. Cook for 5-7 minutes until the mushrooms are soft and have released their moisture.
  3. Pour in the vegetable broth and bring the mixture to a gentle boil. Add the soy sauce, lime juice, salt, and black pepper to taste.
  4. Reduce the heat and let the soup simmer for 10 minutes, allowing the flavors to meld together.
  5. Remove the pot from heat and stir in the chopped cilantro and green onions. If desired, sprinkle with chili flakes for added heat.
  6. Serve the soup hot, garnished with additional cilantro and green onions if desired.
