- Mushrooms (shiitake or oyster) - 50 grams, sliced
- Egg - 1 large
- Spring onions - 2 stalks, chopped
- Fresh coriander - 10 grams, chopped
- Fish sauce - 1 tablespoon
- Salt - to taste
- White pepper - 1/2 teaspoon
- Cornstarch - 1 tablespoon (mixed with 2 tablespoons water)
Steps
- In a pot, bring the chicken or vegetable broth to a gentle simmer.
- Add the sliced bamboo shoots and mushrooms to the pot, cooking for about 5 minutes or until tender.
- Stir in the fresh crab meat and let it cook for another 3-4 minutes.
- In a small bowl, beat the egg. Slowly drizzle the beaten egg into the soup while stirring gently to create egg ribbons.
- Add fish sauce, salt, and white pepper to taste.
- Thicken the soup by adding the cornstarch mixture, stirring until the soup reaches the desired consistency.
- Remove from heat and add chopped spring onions and coriander just before serving.
