Ingredients

  • Fresh crab meat - 150 grams
  • Bamboo shoots (sliced) - 100 grams
  • Chicken or vegetable broth - 500 ml
  • Mushrooms (shiitake or oyster) - 50 grams, sliced
  • Egg - 1 large
  • Spring onions - 2 stalks, chopped
  • Fresh coriander - 10 grams, chopped
  • Fish sauce - 1 tablespoon
  • Salt - to taste
  • White pepper - 1/2 teaspoon
  • Cornstarch - 1 tablespoon (mixed with 2 tablespoons water)

Steps

  1. In a pot, bring the chicken or vegetable broth to a gentle simmer.
  2. Add the sliced bamboo shoots and mushrooms to the pot, cooking for about 5 minutes or until tender.
  3. Stir in the fresh crab meat and let it cook for another 3-4 minutes.
  4. In a small bowl, beat the egg. Slowly drizzle the beaten egg into the soup while stirring gently to create egg ribbons.
  5. Add fish sauce, salt, and white pepper to taste.
  6. Thicken the soup by adding the cornstarch mixture, stirring until the soup reaches the desired consistency.
  7. Remove from heat and add chopped spring onions and coriander just before serving.
