- Pork intestines - 200 grams
- Pork bone broth - 500 ml

- Garlic - 2 cloves, minced
- Fish sauce - 1 tablespoon
- Black pepper - 1 teaspoon
- Green onions - 2 stalks, chopped
- Fresh herbs (cilantro, mint) - 1/4 cup, chopped
- Lime - 1, cut into wedges
Steps
- Rinse the pork intestines thoroughly under cold running water, then soak them in vinegar water for about 15 minutes to remove any odor.
- In a pot, bring the pork bone broth to a gentle simmer. Add the sliced shallots, grated ginger, and minced garlic, allowing them to infuse the broth with flavor.
- After soaking, rinse the intestines again and cut them into 5 cm pieces. Add them to the simmering broth.
- Stir in the fish sauce and black pepper. Let the soup simmer for about 20 minutes, or until the intestines are tender.
- Taste the broth and adjust seasoning if necessary. Add chopped green onions and fresh herbs just before serving.
- Serve the soup hot, garnished with additional herbs and lime wedges on the side.
