  • Pork intestines - 200 grams
  • Pork bone broth - 500 ml
  • Shallots - 2 medium, sliced
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Fish sauce - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Fresh herbs (cilantro, mint) - 1/4 cup, chopped
  • Lime - 1, cut into wedges

Steps

  1. Rinse the pork intestines thoroughly under cold running water, then soak them in vinegar water for about 15 minutes to remove any odor.
  2. In a pot, bring the pork bone broth to a gentle simmer. Add the sliced shallots, grated ginger, and minced garlic, allowing them to infuse the broth with flavor.
  3. After soaking, rinse the intestines again and cut them into 5 cm pieces. Add them to the simmering broth.
  4. Stir in the fish sauce and black pepper. Let the soup simmer for about 20 minutes, or until the intestines are tender.
  5. Taste the broth and adjust seasoning if necessary. Add chopped green onions and fresh herbs just before serving.
  6. Serve the soup hot, garnished with additional herbs and lime wedges on the side.
