  • Turmeric powder - 1 teaspoon
  • Fish sauce - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Fresh dill - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Chili pepper - 1, sliced (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Rice vermicelli - 100 grams
  • Vegetable oil - 1 tablespoon
  • Bean sprouts - 50 grams
  • Lime wedges - for serving

Steps

  1. In a pot, heat the vegetable oil over medium heat. Add the chopped shallots and minced garlic, sautéing until fragrant and translucent.
  2. Stir in the sliced ginger and turmeric powder, cooking for an additional minute.
  3. Add the eel fillet to the pot, cooking until it begins to brown slightly on all sides.
  4. Pour in the chicken stock, followed by the fish sauce and lemon juice. Bring the mixture to a gentle boil, then reduce heat and let it simmer for 15 minutes.
  5. While the soup is simmering, cook the rice vermicelli according to package instructions. Drain and set aside.
  6. Once the soup is ready, taste and adjust seasoning with salt and black pepper as needed.
  7. To serve, divide the cooked rice vermicelli between two bowls. Ladle the eel soup over the vermicelli, and top with bean sprouts, fresh dill, cilantro, and sliced chili pepper if using.
  8. Serve hot with lime wedges on the side for squeezing over the soup.
