Ingredients

  • Broccoli - 200 grams
  • Carrot - 100 grams
  • Mushrooms (shiitake or button) - 100 grams
  • Vegetable broth - 500 ml
  • Soy sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Fresh cilantro - a handful, chopped
  • Black pepper - to taste
  • Lime - 1, juiced

Steps

  1. Wash and chop the broccoli into small florets, peel and slice the carrot, and clean and slice the mushrooms.
  2. In a large pot, heat the olive oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
  3. Add the sliced carrots and mushrooms to the pot, stirring occasionally, and cook for 5 minutes until they start to soften.
  4. Pour in the vegetable broth, and bring the mixture to a boil.
  5. Once boiling, reduce the heat and add the broccoli, soy sauce, and black pepper. Let it simmer for about 10 minutes until the broccoli is tender but still vibrant.
  6. Remove the pot from heat, stir in the lime juice, and taste for seasoning.
  7. Serve the soup hot, garnished with chopped green onions and fresh cilantro.
