- Broccoli - 200 grams
- Carrot - 100 grams
- Mushrooms (shiitake or button) - 100 grams
- Vegetable broth - 500 ml
- Soy sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Fresh cilantro - a handful, chopped
- Black pepper - to taste
- Lime - 1, juiced
Steps
- Wash and chop the broccoli into small florets, peel and slice the carrot, and clean and slice the mushrooms.
- In a large pot, heat the olive oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
- Add the sliced carrots and mushrooms to the pot, stirring occasionally, and cook for 5 minutes until they start to soften.
- Pour in the vegetable broth, and bring the mixture to a boil.
- Once boiling, reduce the heat and add the broccoli, soy sauce, and black pepper. Let it simmer for about 10 minutes until the broccoli is tender but still vibrant.
- Remove the pot from heat, stir in the lime juice, and taste for seasoning.
- Serve the soup hot, garnished with chopped green onions and fresh cilantro.
