- Carrot - 1 medium, sliced
- Shallots - 1 medium, diced
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Sesame oil - 1 teaspoon
Steps
- Chop the broccoli into bite-sized florets and slice the carrot thinly.
- In a pot, heat the sesame oil over medium heat and add the minced garlic, grated ginger, and diced shallots. Sauté until fragrant, about 2-3 minutes.
- Add the sliced carrot and broccoli florets to the pot and stir for another 2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Once boiling, reduce the heat and let it simmer for 10-15 minutes, or until the vegetables are tender.
- Stir in the soy sauce, lime juice, salt, and black pepper. Adjust seasoning as needed.
- Remove from heat and garnish with fresh cilantro before serving.
